Named by Bon Appetit magazine as Georgia’s “King of Barbecue” – no mean feat when you consider the calibre of fire-cooking that comes out of that part of the world – Bryan Furman’s story as a pitmaster is the stuff of legend. As one of our spearhead international chefs cooking at Meatopia 2019, we couldn’t resist having him on the Cutting Room stage to take us through a recipe (smoked chicken, before you ask) and talk to us about his lightening-does-strike-twice experience. Just promise us one thing: don’t call him ‘chef’.
